Fidel Palacios holds a cacao fruit sliced open to show the sweet, white pulp inside. Cacao farmers like him remove the seeds from the pulp to ferment and dry them. Later they get used for chocolate products made by Bogotá-based Late Chocó, owned by Fidel’s brother, Joel Palac
